Pickle Brine:
For maximal pickle flavor in this tasty hummus, I like to use a few tablespoons of pickle, brine rather than the traditional lemon juice or ice water.
Chickpeas:
Chickpeas, also known as garbanzo beans, are a staple ingredient in traditional hummus. They provide a creamy texture and a mild, nutty flavor that pairs well with a variety of seasonings and spices. If you have the time, you can use dried chickpeas and cook them yourself, but canned chickpeas work just as well and save time.

Instructions:

tips, tricks and alterations:
- For a smoother hummus opt for extra time in the food processor rather than adding more liquid. This will prevent you ending up with a soupy rather than a smoother consistency.
- Dill pickle dip – if you’re looking for maximum dill pickle in this hummus double or triple the amount of chopped dill pickles. Take half of the chopped dill, pickles, and fold them into the hummus mixture for a chunky pickle forward appetizer.
- Out of chickpeas? You could use white beans like navy or great northern beans instead. Note that white beans are going to become smooth in the food Processor more quickly than chickpeas would.
- I love spicy dill, pickles! So I fully support spicing up this dill pickle hummus as well. Just add a quarter teaspoon of red pepper flakes to the mixture.
- You definitely want to use a food processor rather than an immersion blender for this recipe. An immersion blender is not gonna have the horsepower to give you the perfect consistency for a creamy hummus.
- Store leftover hummus in an airtight container in the refrigerator. It will stay fresh for up to a week. And you can always freeze any extra hummus.

Dill Pickle Hummus
Ingredients
- 2 can 15 oz chickpeas, drained and rinsed
- 2 dill picles ¼ spears
- ¼ cup tahini
- 2 cloves garlic minced
- 6 tablespoons pickle jucie
- ¼ cut fresh dill
- ½ teaspoon ground cumin
- 1 teaspoon Salt
- ½ teaspoon fresh ground black pepper
- 2 chopped pickles (for topping)
- 2 tablespoons extra virgin olive oil (for topping)
Instructions
- In a food processor or blender, combine the chickpeas, tahini, garlic, pickle juice, fresh dill, cumin, salt, and pepper. Blend until the mixture is smooth and creamy, stopping to scrape down the sides of the bowl as needed.
- If the hummus is too thick, add a tablespoon or two of water to thin it out. Taste the hummus and adjust the seasoning as needed.
