Notes
How to store fresh pesto?Store this fresh pesto in an airtight container. The top layer of pesto will oxidize and turn a little brown if exposed to the air. It is not that big of a deal if this happens, just mix it back up and it will taste it perfectly fine. To prevent oxidation you can add a drizzle of olive oil over the top layer to protect the basil leaves from the air. Or, use a small piece of plastic wrap to cover the top of the pesto in the container. You can also freeze the pesto. You can use an ice cube tray to create pesto cubes and store them in a plastic bag. Or, just use an airtight container that is safe to put in the freezer.A day before you want to use the pesto, take it out of the freezer and put it in the refrigerator to thaw.
