Lentil Salad with Feta and Pomegranate (Lettuce Wraps)
Lentil salad with feta and pomegranate is a surprisingly delicious combination of earthy, salty, and sweet flavors. The combination of the brine from feta cheese, and the sweet pop of pomegranate works amazingly well with the filling and satisfying fiber-packed lentils.
Ingredients
- 2 cups cooked French Lentil
- 4 oz Feta
- 1 cup pomegranate
- 1 cup cilantro
- ¼ chopped Mint
- ¼ chopped Red onions freash or pickled
- 1 jalapeno chopped
Dressing
- 4 tables spoons of lime juice about 2 lime
- Zest of a lime
- 3 olive oil
- 1 teaspoon cumin
- 1 teaspoon coriander
- 2 tablespoon Honey
- ½ salt
- ¼ fresh ground Pepper
Lettuce Wrap
- 1 head bibb lettuce
Instructions
- Cook the lentils.2 cups cooked French Lentil
- Make the dressing by combining the lime juice, zest of lime, olive oil, cumin , coriander, honey, salt and pepper.4 tables spoons of lime juice, 3 olive oil, 1 teaspoon cumin, 1 teaspoon coriander, 2 tablespoon Honey, ½ salt, ¼ fresh ground Pepper, Zest of a lime
- Combine the cooked lentils, crumble feta, pomegranate, chopped cilantro, chopped mint, chopped onion, chopped jalapeno and dressing.4 oz Feta, 1 cup pomegranate, 1 cup cilantro, ¼ chopped Mint, ¼ chopped Red onions, 1 jalapeno
- Serve in lettuce wraps.1 head bibb lettuce
