Lentil Salad with Avocado, Cherry Tomato, and Lime Cilantro Vinaigrette
Packed with flavor and contrasting textures, this bright and nutritious salad is hearty enough for a main dish and works well as a side. Lentil salad with avocado, cherry tomatoes, and lime cilantro vinaigrette is an excellent make-ahead salad for meal planning or bringing to a potluck. Thanks to the high acid content in the limes cilantro vinaigrette, the avocado stays green even when you make it the day ahead of time.
Ingredients

- 2 cups cold lentils
- ½ cup chopped red onion
- 1 avocado
- 1 pint of cherry tomatoes
- 1 jalapeno pepper chopped
- ½ cup cilantro vinaigrette
- 1 cucumber
lime cilantro vinaigrette
- ⅓ Cup lime juice
- 2 teaspoon honey
- 1 clove garlic crushed
- ½ teaspoon cumin
- 2 tablespoon olive oil
- 2 teaspoon cilantro
- ½ teaspoon salt
- ½ teaspoon fresh ground pepper
- 1 fresh jalapeno chopped
Instructions
- In a large bowl, combine 2 cups of cooked French green lentils, cherry tomatoes, cucumber, red onion, and diced jalapeno.½ cup chopped red onion, 1 pint of cherry tomatoes, 1 cucumber, 1 fresh jalapeno chopped, 2 cups cold lentils
