Lemon sugar cookies are the perfect blend of sweet and tart flavors. The addition of lemon juice and lemon zest provides a citrus burst in every bite, while the sugar and butter create the perfect texture for a chewy and soft cookie. These cookies are quick and easy to make and are sure to be a crowd-pleaser on any occasion.
Instructions
Soften the Butter: The first step is to bring the butter to room temperature. If you haven't had time to let the butter come to room temperature, simply put it in the microwave for 10 seconds at a time until it's just softened rather than melted.
Preheat the Oven: Preheat the oven to 350 degrees F.
Mix the Wet Ingredients: In a large bowl, mix together the sugar, butter, eggs, lemon juice, and lemon zest until fully combined.
Combine the Dry Ingredients: In a separate bowl, combine the flour, salt, and baking soda.
Add the Dry Ingredients to the Wet Ingredients: Slowly mix the dry ingredients into the wet mixture, one cup at a time, until fully incorporated.
Shape the Dough into Balls: Shape the dough into golf ball size balls. You should end up with about 16-20 total.
Roll the Balls in Sugar: Put the remaining ¼ cup of granulated sugar in a small bowl. Roll each ball in the sugar and place them on a parchment paper-lined cookie sheet. Make sure to give the cookies room to spread out in the oven.
Bake the Cookies: Bake the cookies in the oven for 11-13 minutes, or until just golden at the bottom edge. You might be tempted to put them in for longer, but resist the urge unless you want a crispy cookie.
Variation: Thyme Lemon Sugar Cookies
If you want to add another depth of flavor to these cookies, try adding some herbs. Mix in 2 teaspoons of fresh thyme (or 1 teaspoon of dried thyme) with the flour and baking soda for a simple and delicious twist on the classic lemon sugar cookie.
Freezer-Friendly:
These cookies are also freezer-friendly, making them perfect for busy days. Save a few of the cookie dough balls in the freezer for a rainy day. After rolling the dough balls in sugar, flatten them out just a little before placing them in a ziplock bag and storing them in the freezer. To cook from frozen, simply preheat the oven to 350 degrees F and place the cookie dough on a cookie sheet lined with parchment. Add 4-6 minutes to the normal cooking time.
Enjoy these delicious lemon sugar cookies with a glass of milk or a cup of tea. These cookies are perfect for any occasion, from a casual snack to a special event. Happy baking!
