Fall spiced banana bread has all the delicious tastes of classic banana bread plus the autumn flavors of a pumpkin spice mix. The sugar crumble topping is absolutely scrumptious.
What do you need to make Fall Spiced Banana Bread:
Bread
- 3 overripe bananas (smashed)
- 6 tablespoons butter softened
- 2 eggs
- ⅔ cups granulated sugar
- 1 teaspoon vanilla
- ¼ cup cream
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 3 teaspoons Pumpkin Spice Mix (homemade or store-bought)
Crumble
- ¼ cup flour
- ¼ cup sugar
- 3 tablespoon butter (just melted)
Start by preheating the oven to 350F and generously greasing your 9”x5” loaf pan with softened butter.
The pumpkin spice mixture:
The signature autumn flavor in this banana bread comes from a “Pumpkin Spice'' mixture which is made up of cinnamon, ground ginger, allspice, nutmeg and clove. You can find pre-made “Pumpkin Spice'' blends at most stores, but here is my recipe for HomeMade Pumpkin Spice Blend I like to have at hand throughout the fall. Use a 1 teaspoon for the sugar crumble and 2 teaspoons for the batter itself.
The bananas:
You want to use overly ripe bananas for this recipe, this will make your bread moist and flavorful. Whenever bananas are about to go bad, I throw them in the freezer for future baking adventures. If I don’t remember to take them out a few hours beforehand I just put them in the microwave for 30 seconds increments until they’re mushy.
If you only have fresh yellow bananas at hand you can speed the process along by baking the bananas. Place your bananas on a cookie sheet and bake at 300F for 30 minutes or until brown and soft.
The sugar crumble:
In a small bowl combine ¼ cup sugar, ¼ cup flour, 1 teaspoon of the pumpkin spice mixture, and 3 tablespoons of just melted butter. Combine the mixture gently. You don't want to over-mix, allowing the mixture to remain crumbly and not overly soft.
The batter:
In a large bowl mix the mashed bananas with the sugar, softened butter, vanilla, and egg. Mix until fully combined. Next, add the flour, salt, baking soda, baking powder, and 2 teaspoons of the pumpkin spice mixture.
Once your battery is fully mixed pour it into your heavily greased loaf pan. Cover the batter with chunks of the sugar crumble.
Bake for 50 to 55 minutes at 350F. Use a toothpick to check that the interior is no longer gooey.
