These Apple Cinnamon Muffins are super moist and a great grab-and-go breakfast for busy mornings. They come together super quickly and are a good excuse to get a few extra apples at the store or apple picking.
How to Make Apple Cinnamon Muffins:
Equipment:
- 2 large bowls
- 1 wooden spoon
- 1 standard muffin pan

Produce:
- 4-6 apples (chopped)
Dairy:
- ½ cup milk
- 2 eggs
- 2 tablespoon butter (for greasing the pan)
Pantry:
- 2 cups all-purpose flour
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup granulated sugar
- ½ cup vegetable oil
- 2 teaspoon cinnamon
- 1 teaspoon nutmeg
- 2 teaspoon vanilla extract
Start by preheating the oven to 350 and generously greasing a muffin tin with soft butter.
In a large bowl combine the flour, baking powder, baking soda, and salt. I like to use baking soda and baking powder in my muffins because they are both leavening agents but they rise at slightly different times giving the muffins a great crumb structure.
Next, chop your apples. Baking tip: Once you mix the baking soda and baking powder into the wet ingredients, the leavening action is activated. Therefore, you want to minimize the time between mixing and getting the batter into the oven. Having your apples chopped before you start mixing the batter will help you be ready to go!
In a separate large bowl, combine the sugar, milk, vegetable oil, eggs, and vanilla. Once the wet ingredients are fully combined, add in the dry ingredients you have already prepared and mix thoroughly. I prefer to do this with a fork or spoon rather than in a stand mixer. This recipe does not want to be over-mixed.
Next, fold the chopped apples into the mixture until they are coated with the batter and evenly distributed.
Scoop the batter evenly into your greased muffin pan and place it in the oven for 20 to 24 minutes. Take them out of the oven when the edges are just golden brown.
These scrumptious Apple Muffins will store well in Tupperware on the counter for a couple of days for an easy grab-and-go breakfast or afternoon snack.
